Caramelised Apricots with Vaalia Low Fat French Vanilla Yoghurt

Ingredients
- 700g fresh apricots, halved and pitted
- 2 tablespoons packed light brown sugar
- 250g Vaalia Low Fat French Vanilla yoghurt
- 1 large disposable roasting pan
- Icing sugar
Directions
- Turn on grill to low. Arrange apricots cut sides up, in disposable roasting pan and sprinkle with brown sugar, patting and pressing with fingers to help evenly stick to the apricots.
- Cook apricots in pan without turning for five minutes until sugar is melted and apricots are softened.
- Serve apricots with Vaalia Low Fat French Vanilla yoghurt on the side. Sprinkle with icing sugar.
