Raspberry Muffins
Ingredients
- 1/2 cup butter
- 3/4 cup sugar
- 1/2 cup raspberries
- 100 grams of Vaalia Low Fat French Vanilla yoghurt
- 2 cups of wholemeal plain white flour
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon nutmeg
- 1 teaspoon vanilla essence
Directions
- Preheat oven to 200°C.
- In a mixer, cream together sugar and butter until smooth.
- Add Vaalia Low Fat French Vanilla yoghurt, vanilla essence, and raspberries, keep on mixing.
- Add the flour, nutmeg, baking soda and powder.
- Butter or spray the muffin tins. Pour the mix evenly into the tins.
- Bake for around 20 minutes, or until cooked.
