Vaalia Mixed Berries Yoghurt Ice-cream

Ingredients

1 punnet blueberries

1 punnet raspberries

1 punnet strawberries

110g (1/2 cup) caster sugar

150ml light thickened cream

1 tsp of vanilla essence

325g each of Vaalia Low Fat Luscious Berries Yoghurt and Vaalia Low Fat Natural Yoghurt
Directions
- Place all of the berries in a blender and process until smooth, then pour the mixture into a sieve and press the mixture through to capture the juice and the fruit, then discard the seeds and the ‘bits’.
- Use electric beaters to whisk up the sugar, cream and vanilla essence until soft peaks form, and then add this mixture to the yoghurt and stir through. Pour the berry puree into this combined mixture and stir through.
- Pour the mixture into an airtight container and cover.
- Freeze for approximately 2-3 hours and then check to see if the ice-cream is setting around the edges. To eliminate icy frozen portions you can use a wooden spoon to break these up and give another stir through the mixture before completely frozen. Cover again and put back in freezer over night.
- Place in the fridge for approximately 30-40 minutes to soften a little before serving.
