Zucchini Bites

You can eat them warm or cold!

Ingredients
- 1/4 Vaalia Natural yoghurt
- 1 tablespoon olive oil
- 3 rashers of bacon - finely chopped
- 1 onion - finely chopped
- 1 large carrot - grated
- 1 large zucchini - grated
- 3 eggs
- 1 cup grated tasty cheese
- 1/2 cup self raising flour
Directions
- Preheat oven to 180°C.
- Grease muffin tins.
- Pan fry onion and bacon until cooked. Add the carrot, stir for about 3 minutes and add the grated zucchini.
- Transfer to a large bowl and cool for 10 minutes.
- In a jug, whisk the eggs together, add cheese and Vaalia Natural yoghurt.
- Stir egg mixture into cooled zucchini mixture and stir flour through until mixed.
- Spoon mixture evenly into muffin tins.
- Bake for about 15 - 20 minutes or until golden and cooked.
