Zucchini Bites

You can eat them warm or cold!

Ingredients

  • 1/4 Vaalia Natural yoghurt
  • 1 tablespoon olive oil
  • 3 rashers of bacon - finely chopped
  • 1 onion - finely chopped
  • 1 large carrot - grated
  • 1 large zucchini - grated
  • 3 eggs
  • 1 cup grated tasty cheese
  • 1/2 cup self raising flour

 

Directions

  1. Preheat oven to 180°C.
  2. Grease muffin tins.
  3. Pan fry onion and bacon until cooked. Add the carrot, stir for about 3 minutes and add the grated zucchini.
  4. Transfer to a large bowl and cool for 10 minutes.
  5. In a jug, whisk the eggs together, add cheese and Vaalia Natural yoghurt.
  6. Stir egg mixture into cooled zucchini mixture and stir flour through until mixed.
  7. Spoon mixture evenly into muffin tins.
  8. Bake for about 15 - 20 minutes or until golden and cooked.
