Sunflower Apple Muffins
Ingredients
Place in a bowl:
- 2 cups wholemeal self raising flour
- 1/2 cup sultanas
- 1/2 cup sunflower seeds
- 2 tablespoons sesame seeds
Combine together in a bowl:
- 1/2 cup canola oil
- 1/2 cup brown sugar
- 2 x 60g eggs
- 2 x 150g tubs (1 cup) Low Fat French Vanilla yoghurt
- 2 large (190g each) green cooking apples, peeled and coarsely grated
Directions
- Pre heat oven to 180°C (fan forced) 190°C (conventional). Brush medium muffin pans with canola oil.
- Make a hollow in the centre of the dry ingredients. Pour in Vaalia yoghurt and apple mixture. Stir together until just combined.
- Fill muffin pans 3/4 full with mixture.
- Bake for 20-25 minutes until well risen and golden brown. Remove, stand a few minutes, turn out onto a wire rack. Serve warm.
