Sunflower Apple Muffins

Makes 12 muffins

Ingredients

Place in a bowl:

  • 2 cups wholemeal self raising flour
  • 1/2 cup sultanas
  • 1/2 cup sunflower seeds
  • 2 tablespoons sesame seeds

Combine together in a bowl:

  • 1/2 cup canola oil
  • 1/2 cup brown sugar
  • 2 x 60g eggs
  • 2 x 150g tubs (1 cup) Low Fat French Vanilla yoghurt
  • 2 large (190g each) green cooking apples, peeled and coarsely grated

Directions

  1. Pre heat oven to 180°C (fan forced) 190°C (conventional). Brush medium muffin pans with canola oil.
  2. Make a hollow in the centre of the dry ingredients. Pour in Vaalia yoghurt and apple mixture. Stir together until just combined.
  3. Fill muffin pans 3/4 full with mixture.
  4. Bake for 20-25 minutes until well risen and golden brown. Remove, stand a few minutes, turn out onto a wire rack. Serve warm.
