A perfect Summer dish, slice into wedges and serve with fresh salad.

Ingredients

  • 5 rashers rindless bacon
  • 4 eggs
  • 50gm parmesan cheese (1/3 cup)
  • 1/4 cup  Vaalia natural yoghurt
  • 2 large zucchinis
  • salt and pepper
  • 5 g olive oil for cooking

Directions

 

  1. Grate 2 large zucchinis into a bowl. Dice up the five rashers of bacon and then add to the bowl of zucchini.
  2. Crack the four eggs into the grated zucchini and diced bacon.
  3. Add 1/4 cup of Vaalia Natural Yoghurt, 50g (1/3 cup) of parmesan cheese and then season lightly with salt and pepper.
  4. Whisk all ingredients together.
  5. In a fry pan (ideally a deep one) add 1 tsp (5g) of Olive Oil. Spread oil around pan to coat.
  6. Pour in the mixture and move evenly around the pan so it's evenly spread.
  7. Cook over low heat for approximately 6-7 minutes and then transfer pan to underneath grill.
  8. Grill (to cook through thoroughly) for approximately 4 minutes.
