Thanks to Vaalia Low Fat Luscious Berries Yoghurt, this trifle-with-a-twist is light and creamy, oozes flavour and also packs a healthy punch with its unique trio of probiotic cultures.

Ingredients

  • 1 x 20cm basic sponge cake+, cut in
    half horizontally
  • ½ cup (125ml) apple juice
  • 1¹⁄³ cup (280g) Vaalia Low Fat Luscious
    Berries Yoghurt
  • 375g mixed fresh berries
  • 2 peaches, halved
  • ¼ cup (55g) caster sugar

Directions

  1. Cut 8 x 6.5cm circles from the sponge using
    a cookie cutter.
  2. Place half the rounds in the base
    of 4 x 1¹⁄³ cup (330ml) capacity glasses.
  3. Spoon over half the juice, half the yoghurt and half of the berries.
  4. Top with the remaining sponge, juice, yoghurt and berries. Refrigerate for
    1 hour.
  5. Heat a large non-stick frying pan over
    high heat. Press the peach halves in the sugar
    and cook, flesh-side down, for 2–3 minutes or
    until caramelised. Serve with the trifles.
