Directions
To make pikelets, combine flours, cinnamon and bicarbonate of soda in a bowl. In a separate bowl, whisk together milk, egg, honey and half the yoghurt. Add to flour mixture and whisk to combine.
Place a large non-stick frying pan over medium heat and lightly spray with oil. Using 1 tbs batter for each pikelet, spoon 4 tbs batter into pan and cook for 2 minutes or until bubbles appear on surface. Turn over and cook for a further minute until browned underneath. Remove from pan and keep warm in a low oven. Repeat with remaining batter in 3 more batches.
Divide pikelets among plates, top with the remaining yoghurt and drizzle with extra honey. Serve with pear and plum slices, with mint leaves scattered over.
