Ingredients

  • 1⁄ 3 cup (50g) self-raising flour
  • 1⁄ 3 cup (50g) wholemeal
    self-raising flour
  • 1 tsp ground cinnamon
  • 1 pinch bicarbonate of soda
  • ¼ cup (60ml) low-fat milk
  • 1 egg
  • 2 tbs honey, plus extra, to serve
  • 250g Vaalia Low Fat Apricot, Mango
    & Peach Yoghurt
  • Cooking oil spray
  • Sliced pear and plum, and small
    mint leaves, to serve

Directions

  1. To make pikelets, combine flours,
    cinnamon and bicarbonate of soda in a
    bowl. In a separate bowl, whisk together
    milk, egg, honey and half the yoghurt. Add
    to flour mixture and whisk to combine.

  2. Place a large non-stick frying pan over
    medium heat and lightly spray with
    oil. Using 1 tbs batter for each pikelet,
    spoon 4 tbs batter into pan and cook
    for 2 minutes or until bubbles appear on
    surface. Turn over and cook for a further
    minute until browned underneath.
    Remove from pan and keep warm in a
    low oven. Repeat with remaining batter
    in 3 more batches.

  3. Divide pikelets among plates, top with
    the remaining yoghurt and drizzle with
    extra honey. Serve with pear and plum
    slices, with mint leaves scattered over.
