These delicious and healthy frozen yoghurt sandwiches are packed with juicy berries and wedged between crispy wafers. They’re perfect for hot summer days.

Cooking Time: 6 Hours freezing time (+ 15 minutes prep)

Ingredients

  • Olive oil spray
  • 250g strawberries, washed, hulled
  • 1 tbs caster sugar
  • 900g tub Vaalia Low Fat French Vanilla Yoghurt
  • 125g strawberries, extra, washed, hulled, finely chopped
  • 125g fresh or frozen raspberries
  • 75g (1/2 cup) pistachios, coarsely chopped
  • 24 rectangular ice-cream wafers

Directions

  1. 1 Lightly spray a 20 x 30cm lamington
    tin with oil. Line base and 2 long sides
    with non-stick baking paper.

  2. Process the strawberries and sugar
    in a food processor until smooth.
    Add the yoghurt and process until
    well combined. Pour yoghurt mixture
    into a bowl. Fold extra strawberries
    through the yoghurt. Stir in raspberries
    and pistachio until just combined.

  3. Pour yoghurt mixture into tin. Place
    in freezer for 6 hours or until frozen.

  4. Turn the frozen yoghurt onto a
    large chopping board. Use a wafer as
    a guide to cut the frozen yoghurt into
    12 pieces. Sandwich each piece of
    frozen yoghurt between 2 wafers.

* Brush a little cold water onto the yoghurt to stick it to the wafer, if necessary.
